You will be charmed by this building, formerly known as the Tour de Ciron, built on the remains of an old castle. Its history is rich, as it was first the Cashier's House where miners came to collect their pay until 1860, before becoming a privileged reception venue. Like her establishment, Yazmin is a chef who has evolved over the years. After studying cooking in Mexico, she worked alongside many renowned and Michelin-starred chefs before opening her first restaurant, L'Ambroisie, in Albi, then Inicio in Carmaux since July 2024. Several months of work were necessary to transform the spaces into a splendid restaurant with an elegant and refined room opening onto a beautiful shaded terrace.
