Fish, meat, vegetables, fruit, cheese, flour, bread, eggs… the Tarn region takes center stage in traditional recipes such as duck crackling mousse with gherkin cream, grilled and seed-crusted leg of lamb, or ravioli with mushrooms, ricotta, buckwheat, forest cream, and shavings of Vieux Rodez cheese.
