      Located in Cahuzac-sur-Vère, on a limestone plateau at an altitude of 300 meters, Domaine de Cantalauze distinguishes itself through its rigorous approach to viticulture. A pioneer of organic farming since 1982 under the Nature & Progrès label, this 10-hectare family estate focuses on the balance between respect for biodiversity and technical expertise. Pierre-Olivier and Pauline Laurent, trained and experienced winemakers, produce wines of great precision, driven by a profound understanding of their ecosystem and cutting-edge winemaking methods.


      Cultivation methods and respect for the physiology of the vine

      The strength of Domaine de Cantalauze lies in innovative cultivation methods designed to maintain a living, balanced, and self-sustaining soil. Here, the training system is entirely conceived to respect the physiology of the vine : precise soil work promotes deep root development, while careful pruning ensures the proper flow of sap. The optimal spread of the leaf surface allows for ideal exposure to light, thus ensuring better grape ripening.

      The vineyard showcases the diversity of indigenous grape varieties in this ancient terroir. White grapes such as Mauzac, Ondenc, and Loin de l'Œil, as well as reds like Braucol, Duras, and Prunelart, flourish in this clay-limestone soil. This meticulous technical and quality-driven approach ensures exceptionally pure grapes, the essential foundation for crafting distinctive wines.


      Natural winemaking for precise wines

      Within the winery, whose limestone walls bear witness to over a century of history, the pursuit of precision continues. Hand-harvesting, transport in crates, and the use of conveyor belts preserve the complete integrity of the grapes. Fermentation is carried out exclusively with indigenous yeasts. Systematic sorting on a sorting table, of both bunches and individual berries, ensures consistent precision and aromatic clarity across the different cuvées.

      The estate's technical expertise is expressed through a wide range of winemaking techniques : from the ancestral method to wines aged under a veil of yeast, including aging in stainless steel tanks, oak barrels, or terracotta and stoneware amphorae. The winemakers personally welcome you for tours of the vineyards and cellars, followed by a tasting of their range of 11 wines. It's an authentic immersion into each stage of winemaking, from winter pruning to manual disgorging, revealing the care taken in the creation of these expressive wines.
