1. La Couvertoirade, a village made entirely of stone!

The village of La Couvertoirade is truly unique; ten centuries of history are hidden within its imposing stone walls, which seem to have stood there forever. A special tranquility emanates from this village of stone, distinguished by its designation as one of the Most Beautiful Villages of France. Wander through its maze of narrow streets and admire the 12th- century castle.

Within the ramparts, stroll through the maze of cobbled streets, admire the houses with their characteristic external staircases, and visit the 15th-century church. The lavogne—a traditional circular basin used for watering livestock—bears witness to the pastoral past of the Causse region. Don't forget to wear good walking shoes : numerous hiking trails crisscross the arid surroundings of the village, including the Capitelles Trail and the paths that wind through the expanses of dry grassland populated by Lacaune sheep, whose milk is used to make the famous Roquefort cheese.

2. Belcastel and its fortified castle

Belcastel is a village well worth a stop to enjoy a coffee in the sunshine and a pleasant stroll through its narrow streets. It sits on the banks of the Aveyron River, and its castle overlooks the water.

Classified among the Most Beautiful Villages of France, Belcastel captivates at first sight with its remarkable architectural unity. The brown stone houses with their slate roofs descend towards the river in an orderly cascade, linked by an old medieval humpback bridge which one gladly crosses while watching the Aveyron flow below.

3. Najac and its medieval village

Take a stroll in Najac, a hilltop village steeped in history. Its royal fortress offers a stunning panoramic view of the surrounding countryside.

Najac occupies a spectacular strategic position: the village stretches along a rocky spur overlooking the steep-sided bend of the Aveyron river, more than 200 meters below. This unique configuration gives it a distinctive silhouette, often compared to the prow of a ship launched into the greenery.

It's a pleasure to stroll through, especially in summer, when the small restaurants in the central square unveil their culinary delights. Artisans display their treasures in the village's steep, narrow streets, and numerous local producers offer oils, honeys, and cheeses at the summer markets.

4. Bozouls and its hole

Bozouls is a must-see. An unparalleled natural wonder awaits you there: a real and gigantic horseshoe-shaped hole, carved by the Dourdou river over several million years.

This limestone canyon, approximately 400 meters in diameter and 100 meters deep, is listed among the Great Sites of Occitanie. The horseshoe-shaped cliff seems to literally nibble away at the houses of the old village, perched precariously on its edge. The views from the viewing platforms are breathtaking : one overlooks the canyon floor where the Dourdou River flows, while erosion has sculpted rock strata of fascinating geological beauty.

5. Rodez and the unmissable Soulages Museum

Designated as one of the Great Sites of Occitanie, Rodez is an authentic city that deserves a thorough visit. Stop by the Tourist Office to pick up a map of the historic center before wandering through the narrow streets that lead you to the magnificent Notre-Dame Cathedral of Rodez.

Rodez is also, and above all, home to the Soulages Museum, inaugurated in 2014, which houses the world's largest collection of works by Pierre Soulages, a native son born in Rodez in 1919. An internationally renowned painter, Soulages is particularly known for his work with "Outrenoir," his exploration of light through black. The building itself is a work of art : clad in Corten steel with rusted hues that harmonize beautifully with the pink sandstone of the nearby cathedral. A stroll through its galleries is a rare aesthetic experience, a blend of contemplation and wonder.

6. The City of Stones of Montpellier-le-Vieux

The City of Stones at Montpellier-le-Vieux is one of the world's largest dolomite formations, stretching across nearly 120 hectares. These rocks, with their extravagant shapes reminiscent of animal silhouettes, the ruins of ancient cities, and giant mushrooms, are the result of karst erosion over millions of years. The first explorers who discovered the site in the 19th century believed it to be inhabited by demons and named it " Montpellier-le-Vieux " so as not to frighten the local population.

Just a few kilometers away, you'll undoubtedly want to admire the Millau Viaduct. At 343 meters high at the top of its pylons, it's the tallest cable-stayed bridge in the world. A viewing platform and a museum space allow you to understand its technical achievement while admiring it from the ground.

7. The Tarn Gorges

Between Lozère and Aveyron, it's a paradise for hiking and climbing enthusiasts. Vertiginous cliffs and turquoise waters await.

Carved by the Tarn River over more than 50 kilometers between the Causse Méjean and Sauveterre plateaus, the Tarn Gorges are one of the most breathtaking natural sites in France. In places, the limestone walls reach heights of 500 meters, overlooking a river with remarkably clear emerald waters. The site is a UNESCO World Heritage Site as part of the Causses and Cévennes region.

8. The Roquefort Cellars

Immerse yourself in the world of the famous cheese by visiting the Roquefort-sur-Soulzon ripening cellars, nestled in the heart of the Combalou massif, a vast, thousand-year-old rockfall.

Roquefort is one of the oldest cheeses in the world. Since 1925, it has held a Protected Designation of Origin (PDO), the first ever granted to a cheese in France. Its production is strictly regulated: raw milk from Lacaune sheep, fleur de sel, and Penicillium roqueforti—a mold that develops naturally in the Combalou caves—are the only permitted ingredients.

9. Explore the village of Laguiole

10 - Visit the Lévézou

The Lévézou region is a bocage plateau nestled between mountains and lakes, offering natural landscapes of great beauty and infinite serenity.

Located in the heart of the Aveyron region, the Lévézou is a transitional area between the arid Causses plateau and the highlands of the Aubrac. Its landscape of verdant meadows, hedgerows, oak and beech woods, dotted with traditional granite farmhouses, evokes a preserved French countryside, almost untouched by time. It is one of the least populated regions in France, which gives it a rare tranquility and remarkably clear skies—astronomy enthusiasts will find it a paradise, far from any light pollution.

The Lévézou region is also renowned for its cheeses: Pérail, a small, round, creamy cheese made from raw sheep's milk, is produced on several farms that can be visited directly. Tome fraîche, an essential ingredient in aligot, is also made locally by artisan producers committed to the region's traditional methods.
