      Since 2010, the Galiber family has been passionately and expertly crafting natural cured meats, air-dried in summer and in winter in a natural drying shed exposed to the elements. This approach reflects their commitment to environmentally friendly production, resolutely focused on reducing their carbon footprint. Their priority is quality, which is why they favor short supply chains and local suppliers to create delicious artisanal charcuterie. Their Label Rouge pork comes exclusively from producers in the Tarn-Aveyron region, whose abattoir is located just 2 km from the Ray Gal company. Passionate artisans, Jean-Jacques and Mary-Mary are even members of the Maseliers des Monts de Lacaune brotherhood, and Jean-Jacques is also a member of the French Dry-Cured Ham Academy. Silver medalist at the Paris Agricultural Show for dry sausage in 2024, Gold medalist for dry sausage in 2025, and Silver medalist for dry-cured ham in 2025. Multi-medalist at the SAUCICREOR International Competition for its dry sausage, dry salami, and truffle-flavored salami.       Production traditions are passed down from generation to generation to preserve the unique taste of Lacaune's artisanal and natural charcuterie. The dry-cured meats are first prepared using time-honored methods combined with modern machinery before being naturally dried. The result is a flavorful and aromatic selection of high-quality products, including dry-cured hams, dry sausages, salami, coppa, lonzo, rosette, and dried pork tenderloin. Cooked charcuterie is also available, such as bougnette, boudin, gras double, ham and a trio of pâtés, all of which can be discovered at the Ray Gal shop in Lacaune or on their website.
