    • Our restaurant is part of a family history deeply rooted in the heart of the Tarn Valley, in Ambialet. Since the 19th century, the Hôtel Restaurant du Pont has upheld a unique tradition, blending tradition, hospitality and local cuisine. Originally, Jean-Pierre Saysset settled in a modest house by the river, facing the ferry crossing linking the two banks. This spot quickly became an essential stop for travellers and traders, who came to share a convivial moment over a drink and simple dishes. Thus was born a tradition of hospitality and sharing that still shapes the identity of our establishment today.

      Over the generations, this family-run establishment has gradually evolved into a renowned inn. Ingredients sourced from the surrounding countryside – fish from the Tarn, game, and vegetables – form the heart of the cuisine. Recipes were passed down, refined, and helped build a reputation for generous, authentic dining, enhanced by Gaillac wines such as Château Clément Termes. Today, this culinary richness forms the basis of a local gourmet cuisine, faithful to its roots whilst adapting to contemporary tastes.

      Seven generations later, Julie carries on this legacy with dedication and passion. At the helm of the Hôtel Restaurant du Pont, she is supported by a committed team dedicated to serving 100% home-made cuisine, prepared using fresh, local produce. Each dish reflects a quest for balance between tradition and creativity, showcasing the flavours of the Occitanie region. Certified by the Cuisineries Françaises, our gourmet restaurant in Ambialet is committed to a quality approach, recognised for its respect for ingredients and the seasons.

    A very pleasant hotel with a lovely, very clean, and spacious room. The breakfast was incredibly comprehensive, and the dinner was of high quality, featuring local produce! The staff is discreet and attentive, always available if needed. The view from the hotel is beautiful, and there are plenty of places for leisurely walks. The stream provides ample birdwatching opportunities, and there are good slopes for climbing for the more athletic, offering stunning views. I was there for a business trip, but I will definitely return for a holiday! A bonus for the hotel's little dog who keeps a watchful eye on the grounds 🐕

    Superbely placed with a 1st class restaurant (the more expensive menu) we did not eat from the cheaper carte. Wine top quality Gaillac, service extremely friendly. Well worth s few days stay
