      Homemade dishes with the flavors of Aveyron

      Cooking, seasoning, texture, perfect balance of flavors… Every detail is meticulously controlled at Les Coudercous restaurant. Passionate about cooking since childhood, Vianney immerses you in his culinary world through personalized traditional recipes such as aligot, Aubrac steak, and Espalion tripe. A cuisine rooted in its terroir. Each dish reflects the richness of the Aveyron region, crafted with ultra-local ingredients.

      • Whether it's the rib of beef, the Wok-style Pork stir-fry, or the Lamb Stew, all the meats are guaranteed to be regional (Aubrac, Aveyron, Lozère).
      • The Carré d'Aurillac, the Tomme grise de Pays, the Cantal aged 6 months, not forgetting the farm-made Saint-Nectaire and the undisputed Laguiole make up the cheese platter.
      • The craft beers are made at the Brasserie d'Olt

      A commitment to working with fresh, seasonal produce while respecting the authentic flavor of each ingredient. In fact, in 2025, Elise revived the vegetable garden behind the hotel: zucchini, chard, pumpkins, herbs, and rhubarb thrive in the shade of fruit trees and the coolness of the Boralde stream flowing below. Rediscover the flavor of these fruits and vegetables, grown using permaculture principles according to the seasons.

      A variety of offers for all times of the day

      At Les Coudercous restaurant, you're guaranteed a delicious meal. Open from January 15th to November 30th, it adapts to the seasons and its customers by offering a variety of menus to suit all tastes and budgets.

      Meats from Aveyron

      Local meats are served with aligot, truffade, fries cooked in the traditional Ch'ti style using beef fat, or the daily special. Want to share? Order the Aubrac rib steak, a magnificent cut weighing over 1 kg, available for pre-order.

      Specialties are also offered, such as the veggie plate or the organic trout fillet from the Aubrac Mountains.

      The Pilgrims' Buffet

      This ideal meal after a day of hiking on the GR65 trail includes a choice of fifteen starters, five main courses, and ten desserts. Enjoy your favorite local dishes between April 15th and September 30th. Outside of peak season, Elise and Vianney offer a set menu (three starters, three main courses, and three desserts).

      Snacks for the day

      Whether you're just a little peckish or ravenous, there's something for everyone at Les Coudercous restaurant, which offers a light meal menu 7 days a week from April 15th to September 30th ( 11:00 AM to 5:30 PM ). Choose from hot or cold dishes, including quiches, half a roasted chicken, omelets, a charcuterie board, or a salad box. A little tip: save room for dessert !

      The delicious pizzas

      Tomato base or cream base, they are topped with fresh, local produce, served every evening from April 1st to October 15th, as well as Thursday, Friday and Saturday evenings outside of peak season.

      Sandwiches and salads for a quick lunch

      This takeaway option is ideal if you're heading out for a day hike or walking the Camino de Santiago. Sandwiches, salads, quiches, farçous (a type of savory pancake)... there's a wide variety of choices, complemented by backpack-friendly desserts. Served from April 15th to September 30th, from 7 am to 10 am.

      The restaurant Les Coudercous is open:

      • Open 7 days a week, lunch and dinner, from April 1st to September 30th.
      • Lunchtime, Monday to Friday in the off-season
      • Evenings, by reservation, in low season.

    My adult daughter and I shared a room at Les Coudercous for one night while on our hike of Le Chemin de Compostelle. The owners were welcoming. The hotel was clean, cozy and charming, in the heart of the village. The bedroom and bathroom were updated and inviting. And with only a couple hours notice, they let me change my birthday dinner reservation from 4 people to 7. We had a delicious dinner and wonderful celebration thanks to the owners, with one being the chef and one serving our table and making sure we had everything we needed. They also provided much needed help figuring out some last-minute travel arrangements. If I find myself anywhere near Saint-Chely-d'Aubrac in the future, I will definitely be staying here again.

    We spent one night at this hotel. The room was very clean. The food was excellent, including the breakfast. We had a very good experience with the owners. In short, we highly recommend this establishment.

    Extremely disappointed. The first picture on Trip Advisor shows a piece of Aubrac beef. However, there was no such thing on the menu. There was no a la carte menu but a 3 courses menu with 3 choices...
