This farm-inn is an institution founded in 1987 by Mr. and Mrs. Ramon. They had the audacity to transform their cow barn into a gourmet haven, marking the beginning of a culinary adventure that has lasted for over three decades.

      Currently managed by Anna and Benjamin after two seasons of closure, this iconic place is reborn with an undiminished ambition: to preserve the heritage and soul of the restaurant.

      An unchanging menu for an authentic sensory experience

      What forges the reputation of the Buron de la Sistre is its visceral attachment to tradition. Here, the journey begins with a unique menu, a true ode to the local produce, which has remained virtually unchanged for 30 years.

      Guests gather around a table to enjoy local charcuterie and the famous Aveyron farçous. The highlight of the meal, of course, remains the ritual of aligot : it perfectly complements a grilled sausage or a butcher's cut selected from local producers.

      To conclude this enchanting interlude, the well-kept secret of " Nuage d'Aubrac " adds a touch of indulgence to your meal. This experiential approach, which includes red wine and coffee, promises a rare moment of conviviality, praised by the prestigious Lonely Planet guide in 2024 and 2025.

      The restaurant welcomes you throughout the seasons to savor its distinctive cuisine: from the end of March for weekends and public holidays, then from Wednesday to Sunday in June. During the summer months of July, August, and September, enjoy the daily lunch menu, before concluding the season with autumnal flavors in October.

      By stepping through the door of this historic place, you are not simply coming to eat. You are participating in the preservation of a living heritage, driven by the passion of a duo determined to showcase the traditions of Aubrac.

    I first discovered this wonderful place 17 years ago, and I must say that since you took over, I've been very pleasantly surprised to see that nothing has changed—quite the opposite! Always a smile, a great atmosphere, and what can I say about the food: simple and delicious. Keep up the good work, and we've already planned to come back next year.
