      An atypical and committed signature

      Far removed from industrial standards, Cédric Millet 's approach is based on a quest for absolute purity. His philosophy is clear: the product, and nothing but the product. With creations boasting 90% local ingredients, the chef travels to markets in the Tarn region and personally meets with producers to unearth exceptional products. This short supply chain guarantees total freshness for wholesome pastries, guaranteed free of artificial colors and preservatives.

      Its uniqueness lies in a balance of flavors, where sugar fades into the background to give way to the unexpected. Cédric Millet likes to challenge palates by combining seasonal fruits with vegetal or spicy notes: melon meets Tulsi grown in Albi, apple is paired with parsnip, clementine is combined with Espelette pepper, black garlic enhances chocolate… Each dessert becomes a taste surprise.

      Between tradition and creative audacity

      While the baker honors local heritage with his now-famous Sablé Albigeois, he cultivates a perpetual quest for creativity through ephemeral pastries that are renewed every three to four weeks. This constant evolution reflects a desire to explore ever more unique flavors.

      Among the gems not to be missed during the warmer months: La Calade du Pont Vieux. This pebble-shaped dessert, a poetic tribute to the cobblestones of the neighborhood, boldly combines Albi lemongrass and a local honey steeped in history, harvested following the discovery of a swarm in front of the shop.

    Upon entering the tea room, I immediately felt at ease, as if I were being welcomed into a friend's home. Two customers were chatting happily. I was greeted with a smile, in a setting that was elegant yet unpretentious. The cakes are fabulous, by far the best I've ever eaten. I started with a feijoa cake, very sweet and subtle, then continued with a reimagined galette des rois (king cake), and finished with an even more surprising "trendy apple" cake. I took my time savoring them slowly to appreciate all the flavors, while chatting pleasantly with my friend and the waitress. Time flew by! I absolutely must come back, because unfortunately, I didn't have enough of an appetite to eat them all that day.

    Oh this is such a treat. Unique patisserie with “surprise” flavours. A great game to guess the unexpected ( but subtle and delicious) ingredient. Excellent quality coffee and tea. The proprioteurs are charming , passionate about their products and do this all with the support of their fabulous young family. I recommend it !

    I could say that Cédric Millet is "delicate." I could say that Cédric Millet is "hip." I could say that Cédric Millet is "regal." Because Cédric Millet is like his pastries: demanding, curious, intense, with that perfect touch of gentle madness that is the splendid hallmark of genius. I could say that these cakes are the best I've ever eaten, Michelin-starred restaurants included. I could say that these cakes border on perfection. But the truth is, they embrace it wholeheartedly, and take it on a journey to invent a few dance steps, in a completely different universe. An imaginary world, wildly sweet, where everyone works passionately in the pursuit of beauty and joy. A world suddenly made real in the middle of my plate, elegantly served by a sparkling and fabulously warm Coline. All this, I couldn't possibly put into words. Or at least, not well enough. Because these cakes shocked me so much... they almost left me speechless. Which is very difficult! To be continued...
