      With its tender flesh, delicate flavor, and endless culinary possibilities, pigeon is a meat prized for its quality. Passionate about this exceptional bird, Lionel and Nathalie preserve the local flavor with their renowned squab breeding operation. Ideally located in Lombers in the Tarn region, 20-30 minutes from Albi, Gaillac, and Castres, they have gained international recognition after winning over French chefs with their pigeons raised in the best possible conditions.

      Lionel and Nathalie leave nothing to chance , overseeing the entire production chain from breeding and raising to slaughter and preparation, and ultimately to marketing. Housed in wooden buildings with outdoor access, the birds are pampered and raised outdoors, cared for using alternative and natural methods to avoid antibiotics and other medications. This small-scale, environmentally friendly farm operates with 32 pairs per aviary, carefully selected from the finest breeds. Each pair lays two eggs, which will hatch into young pigeons destined for future breeding or for culinary use. Lionel and Nathalie, dedicated to animal welfare, offer three categories of squab : whole, trimmed, or ready-to-cook. The birds are fed 100% natural, GMO-free seeds.

      Although raised in the Tarn region, the Pigeons du Mont Royal are not only prized in the area's finest restaurants. Indeed, renowned chefs such as Sébastien Bras (who was, in fact, the first), Michel Sarran, and Pierre Lambinon have the pleasure of showcasing this exceptional bird in their gourmet cuisine. To enjoy their flavors, you can also book a group tour (20 to 40 people) for a 90-minute visit followed by a tasting. All their recipes are homemade and highlight the local produce and the pigeon itself. Enjoy a unique and convivial experience on Thursdays or Fridays in the heart of the countryside, followed by a tour of the farm, and find all your favorite products in the online shop or directly from the Les Pigeons du Mont Royal farm.

    We dined at Paloma Beach, what a wonderful discovery! Tapas made with pigeon, a delight for the taste buds. Congratulations on this wonderful family initiative and thank you for your warm welcome. There was a slight wait for the food, so please bear with us; it's just the beginning, and honestly, it's well worth the wait, especially in such a peaceful and pleasant setting.
