The story begins in the 19th century (in 1872), when Guilhaume COULET, a resident of Roquefort, undertook to dig a wine cellar under his house.
He discovers "Fleurines" (natural cracks in the rock) and decides to make a Roquefort ripening cellar.
Succeeding him in 1906, his son Gabriel COULET gave his name to the company and consolidated its notoriety. The prestigious brand is now managed by the great-great grandsons of Gabriel COULET.
