He and his wife Maria have chosen to settle in the heart of the charming village of Le Verdier, just 15 minutes from Gaillac, to delight diners from Tuesday to Saturday at lunchtime, as well as on Friday and Saturday evenings. As you might have guessed, Étienne and his team love to embellish their dishes with edible flowers, wild shoots, and aromatic herbs. Rest assured, these aren't the only ingredients on their plates! Talented and creative, they are constantly seeking innovation, crisscrossing the region to work with fresh, local, and seasonal produce, depending on availability and their inspiration. Quality meats, vegetables from local farmers, and country bread from Verdier or Vieux— local sourcing is at the heart of their cuisine. At lunchtime, a set menu is offered, with dishes that change daily, which you can pair with a glass of natural or organic wine —hidden gems discovered in the heart of French regions or abroad. On Friday evenings, snacks take center stage with fish and chips, burgers, mussels and fries, and curries, while on Saturday evenings, Étienne offers a special menu.
