The dovecotes in the Tarn vary greatly in shape, location and the materials used in their construction. Why are there so many? Pigeon droppings, columbine have long been the only input allowed in the vineyard! This is why, to promote the production of this natural fertilizer, dovecotes have been built in the 4 corners of the vineyard. There are more than 1,700 of them to discover during your travels. There is even a route des Pigeonniers , which goes through Gaillac, of course!
