      In the heart of the Aubrac plateau, where the horizon merges with the high-altitude pastures, the Jeune Montagne cooperative preserves a living heritage. Far more than simple dairy production, their approach embodies a unique symbiosis between a volcanic terroir, exceptionally rich flora, and production methods inherited from the old cheesemakers. Each cheese they mature tells the story of a collective commitment : that of 77 local farms dedicated to protecting their land and promoting the Simmental and Aubrac breeds of cattle.

      Laguiole AOP: a heritage refined over the seasons

      Laguiole AOP is the flagship cheese of the house. This raw, whole milk cheese is distinguished by its uncooked pressed paste and thick rind, a veritable armor protecting the complex aromas of hay, hazelnut, and wildflowers. Its production demands absolute patience, respecting the natural cycle of the summer pastures. From the initial shaping of the cheese into wheels to the aging cellars where the wheels rest for 4 to 24 months, each step is a quest for perfection. It is here that the full power of Northern Aveyron is expressed, offering a texture that is both firm and melting, evolving according to the chosen aging time.
